Biba Wine and Cheese Pairing: The Whites

Biba was the location for the Tria Fermentation School’s Wine and Cheese class, Classic Pairings.  The teachers, Michael McCaulley and Sean Faeth were superb.

My adventure started as many of my adventures star—walking at a very quick pace for a bus.   I finally got on a bus and the man next to me breaks out a thick book on cheese with intensely delicious photographs.  I asked him if he was on his way to the class and he responds “I am!  I’m teaching it!”  What timing!  We chatted on the way to the class and he told me about his passion for food and how it took him to various corners of the earth.

To keep it short and simple I’ll list the wine, the paired cheese, if applicable, and a fun fact!

 Prosecco Extra Dry Bele Casel, NV from Veneto, Italy (056098)
– The prosecco is the type of grape and is the typical base for a Bellini.

Sauvignon Blanc, Auntsfield Estate, ’10 from Marlborogh, New Zealand (71261)  paired with the Westfield Capri, a goat cheese from Hubbardston, MA.
– Sauvignon comes from the French language and means wile or savage.

Rosé Brut, Graham Beck, NV, Western Cape, South Africa (069801) paired with La Tur from Piedmont, Italy, a combination of goat, sheep and cow cheese.
– This cheese pairs well with fruit and has an age line and can give you a sense of it’s age.

Riesling Kabinett, Selbach-Oster, ’09, Mosel German (503830) paired with Gres Des Vosges, Alsace, France, a pasteurized cow cheese.
– Kabinett is a lighter, sweeter style or Riesling.

Each wine has a SLO or Special Liquor Order number listed with it.  You can call 1-800-332-7522 to order.  Also, for Pennsylvania, you can look up wines at the various store locations at www.lcb.state.pa.us.com.

Sean Faeth noted that you can never go wrong with a Riesling!  Stay tuned for the reds!

    It was! They have a number of pairing events that look exciting. Loved your beer pairings!

      I’ll have to check out some the other events.

      Glad you liked the beer pairings. Right now we are a little “Beer Geeked Up” in anticipation of Philly Beer Week in June so we have beer on the brain.
