Dandelion Greens

Over the last few weeks I, along with the others receiving the Lancaster Farm Fresh CSA, have been granted with a somewhat overwhelming amount of dandelion greens.  Repeatedly it is the bitterness that drives people to scrunch their nose when they see the long thin greens on their CSA share.

Below you will find a few ways to eat the lovely greens raw. Enjoy them while you still can! That is the beauty of eating locally… each produce item is only in season for so long.

  1. 1. Cucumber Salad.  Cucumbers are a great addition to any heavy green because of their high water content.  I typically like cucumbers, raw beets and raw corn with well chopped dandelion greens.
  2. 2. Goat Cheese and Cranberry Salad.  A semi soft smooth cheese paired with cranberries adds refreshing texture and taste. Add walnuts or pistachios and even grapes and you’re ready to grub.
  3. 3. Blend! If all else fails, blend it! This is true for almost any green you have too much of.  Check out the previously posted recipes here and here.
